The Absolute Best Chili Ever

I have tried many versions of chili and this is now my recipe. For life. It is so flavorful. It is a bit sweet with some heat and just makes the perfect meal on those chilly evenings. Grab some shredded cheese, maybe some Fritos and you are all set! I love to make some homemade grilled cheese sandwiches to go with it as well. If your little ones are not a fan of chili this gives you an option for them and then everyone is happy!

Ingredients:

2 tablespoons vegetable oil

1 onion, chopped

3 cloves of garlic, minced

1 3/4 pounds of ground beef

1 14oz can peeled and diced tomatoes with juice

1 12 oz can or bottle of dark beer. (I use a bottle of Yuengling Lager)

I cup strong brewed coffee

2 6oz cans tomato paste

1 14oz can beef broth

1/2 cup packed brown sugar

3 1/2 tablespoons chili powder

1 tablespoon cumin

1 tablespoon unsweetened cocoa powder

1 teaspoon dried oregano

1 teaspoon dried cayenne pepper

1 teaspoon ground coriander

1 teaspoon salt

2 15oz cans kidney beans

2 fresh hot chile peppers, seeded and chopped (I use jalapeno peppers)

Instructions:

Heat oil in a large saucepan over medium heat. Cook onions, garlic and ground beef in oil for 10 minutes or until well browned and onions are tender.

Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Add brown sugar, chili powder, cumin, cocoa, oregano, cayenne, coriander and salt. Stir in cans of kidney beans and hot chile peppers. Reduce heat to low and simmer for 1 1/2 hours. Enjoy!
